I love drinking bubbles – sparkling wines, prosecco and champagne – any of those will do! I found and pinned a recipe awhile back from The Comfort of Cooking, which showed a lovely glass of prosecco with limoncello, raspberries and mint. I had the prosecco and limoncello already, and I had frozen blueberries, so I thought I’d give that a try.
Here’s what I used in my prosecco:
- prosecco of course (any brand will work)
- frozen blueberries
– or other frozen berries like raspberries, blackberries, strawberries – if you have fresh, pop them in the freezer for a bit before serving - limoncello
– I had store bought, but one day I’ll try making my own – it seems easy enough
Optional: mint sprig (for a pretty garnish and a little extra colour)
I don’t have exact measures, because I think it will vary by glass size and preference. I used tallish champagne flutes, and just eyeballed what looked like enough. Just start with the limoncello, and build from there.
I then added the prosecco and the frozen berries come last. Yes, it might get a bit splashy adding the berries last, but I just love the way the colours mixed and blended together – kinda like a lava lamp with the berries bouncing around in the glass.
After the fact, of course, I remember that I had mint sprigs in my fridge. I was just so excited to open the prosecco and try these out, I forgot all about the presentation. LOL Ah well. I served them to some guest for brunch and because of the blueberries I used, they turned a lovely pinkish hue. The taste was amazing and my guests were pleased and that’s all that matters, right?

I’ve done this same cocktail as yours using raspberries and mint; also delicious. I didn’t buy frozen berries, I just froze some fresh ones on a plate. Easy and so pretty; my favorite combination.
